Our teenage years are definitely some of our most testing years, well that's what I found anyways. At 22 years of age, I do have a whole lotta more learning to do but I also feel like I have learnt a whole lot too. I can certainly say I am now at the most happy place I've ever been in my life and to be able to say that, feels pretty amazing.

Ladies who Lunch | Bar Solo at The Connacht
On Sunday last myself, Cloda (orangeobviously) and Kerrie (bellaandvogue) were invited along to The Connacht Hotel to try out their new summer lunch menu at Bar Solo. Of course before we headed inside we had to explore and take some blog worthy pictures so we found this picturesque corner on the grounds of The Connacht, such an ideal space to chill on a sunny day!
To start off I went with Thai Style Fish Cakes with Lemon Curd & Sweet Chilli Dip and Penny Loaf.
It all tasted so so fresh, it was clear the fish used in the cakes was completely fresh and I fell in love with the lemon curd sauce, it was something I've never had before and it complimented the dish beautifully! The penny loaves were such a cute touch and had that freshly baked taste.
Obviously cocktails were a must..
For my main course I choose the Ricotta Cheese & Spinach Ravioli - petit pois & pearl onion in a white wine & tarragon veloute with cumin and there was also the option of adding smoked salmon to the dish so I went with that. I know I've used the word fresh twice already but again this whole dish tasted completely fresh! The smoked salmon was delish, it literally melted in my mouth. The pasta tasted homemade and was equally as good as the salmon. The sauce was light and not heavily creamy so didn't leave me feeling sickly bloated.
Finally for dessert I had the mango & passion fruit cheesecake. This dessert screamed summer vibes and as I'm a huge fan of anything mango or passion fruit flavoured this ticked all the right boxes for me! It had such a refreshing flavour and was lovely and light. It tasted so tropical and to make it even better the stick of chocolate that accompanied it tasted just like kinder chocolate which is my all time fave!
All in all, I honestly can't fault our day out in The Connacht, the staff was super friendly and helpful, the food and drinks were amazing and it very photogenic which is something us bloggers always appreciate, I'll definitely be back! :)
